Pickled Red Onions

This is something you always have in your fridge. It takes no time at all to create this vinegary, sweet, crunchy topping that will help elevate so many things. Toss them in a salad, throw them on your pizza, or top off avocado toast. It’ll add a beautiful color and punch of flavor!

Ingredients:

  • 1 red onion
  • 1/2 cup apple cider vinegar
  • 1/4 cup red wine vinegar
  • 1 tsp grenadine (you could also use sugar or honey, but grenadine will give it a nice color)
  • 1 tsp minced garlic
  • 1 tsp salt

Finely slice red onion and place in a jar. Bring all other ingredients to a boil, and pour over the top of your onions. Screw the lid on and shake (careful it’s hot).  Let sit at room temperature for 30 minutes and then they’re ready to enjoy!

Refrigerated these bad boys will last up to 3 weeks.
