Tequila Lime Chicken Soup
This soup isn’t the most beautiful, but what it lacks in looks it makes up for in scent and flavor. From the moment you start sautéing the onions your house will smell incredible. Next you’ll add all of the spices for yet another layer of an aromatic dream, but once you add the tequila to the pot, you will be transported right back to the moment you thought it would be a good idea to order a 32oz margarita on Cinco De Mayo and spent the rest of the night having the time of your life.
Don’t worry, this soup is safe for children, but that doesn’t mean you can’t reminisce on your days of youth because we all know you can’t drink that much anymore.

Ingredients
- 1 yellow onion
- Olive oil
- 1tsp chili powder
- 1 tsp cumin
- 1/2tsp cayenne
- 1tsp minced garlic
- 1tsp sugar
- 1c tequila
- 1 can of Rotel original diced tomatoes and green chilies
- 5c chicken broth
- 3 skinless boneless chicken thighs
- 3 limes
- 1 avocado
- 1/2c chopped cilantro
- Salt
- Sour cream (optional)
Instructions
Heat up olive oil in a pot on medium high heat. Dice 1 yellow onion, and sauté until onion starts to brown.
Add in chili powder, cumin, cayenne, minced garlic, salt, and sugar. Mix together until well incorporated.
Add in tequila and bring to a simmer.
Add in rotel, chicken broth, and chicken thighs. Turn heat up to high and bring to boil, once boiling lower heat and allow pot to simmer for 45 minutes. While soup is simmering slice up avocado and cilantro.
After 45 minutes, remove chicken from pot, shred, and then return to pot. Add the juice of 3 limes, diced avocado, and cilantro. Check those salt levels and then you’re all done!
Serve with a dollop of sour cream if you so desire and enjoy.
